Healthy Xmas “Rum Balls”

These chocolatey little treats are a healthy alternative to traditional “rum balls” with no refined sugar or nasties.  You can adjust the sweetness / bitterness to taste by adding more or less of the syrup.

Ingredients
  

  • 3/4 cup Rolled Oates
  • 1 1/2 cup Rice pops (I use the 100% rice ones from the health food aisle)
  • 1/2 cup Dark Cocoa
  • 1/2 cup Desiccated Coconut
  • 2 tbsp Pea Protein (or other protein powder of your choice)
  • 2 tbsp Coconut Oil (Melted)
  • 2 tbsp Rice Malt syrup or maple syrup
  • 5 Fresh dates Chopped into small pieces
  • Desiccated Coconut (Extra for rolling balls into)

Instructions
 

  • Method
    Add all dry ingredients to a large bowl & mix until combined
    Add dates & wet ingredients
    Add a little extra water a TBSP at a time until mix is moist and holds together
    Roll into balls any size you like (clean wet hands work best)
    Roll in desiccated coconut
    Refrigerate until firm
     
    Variations
    Choc Mint – add a few drops of peppermint oil / essence to the mix with the wet ingredients
    Mocha – use add a shot of espresso instead of the water
    Choc Orange – add a few drops of orange oil or orange rind
    Black Forest – add some chopped fresh cherries
