Many people have asked me whether all plants provide essentially the same nutrition, with differences determined only by the soil they grow in.
The answer is they are not the same. While healthy soil and a thriving microbiome are essential, each plant is naturally programmed to produce and accumulate its own unique combination of vitamins, minerals, and protective phytochemicals.
This is why variety matters. A colourful, diverse diet provides a broader spectrum of nutrients that support both bone health and cardiometabolic health. Vitamin K from leafy greens, magnesium from legumes, carotenoids from orange vegetables, polyphenols from berries and flavonoids from many fruits and vegetables all contribute in different ways to healthy bones, muscles, blood vessels and metabolism.
Another important consideration is when our food is harvested. Some of the produce found in supermarkets is picked before it reaches full ripeness so it can better withstand transport and enjoy a longer shelf life. While these continue to soften and develop colour after harvest through artificial ripening, they may not achieve the same nutritional profile as produce allowed to mature naturally on the plant. So, whenever practical, choosing locally grown, seasonal produce—and organic where appropriate—can help maximise freshness, flavour and nutrient retention. For example this is why new season apples taste so great, compared to older stored varieties.
Also, keep in mind that supplementation for a vitamin or mineral deficiency can be a useful tool, if fresh produce is unavailable.
